I had been meaning to make this super simple absolutely delicious salad in one of Nigella's books for years now and finally just did. It's so tasty. Just shredding carrots, peanuts and a light dressing. So good.
Then the next day I tossed in quinoa and edamame, a bit more dressing and loved it as well. The second day peanuts weren't as crunchy but it was still very good. This salad is a winner.
