I love you, Onigiri. It's Mariko's fault. She posted about this being her favorite snack months ago, then made me some, and now I am hooked. God, like I need to be scarfing white rice all day. She told me to use this rice (I think. Well, that's what I am using anyway. It's the first one listed on this link.) And she used some tasty rice seasoning packet, but I just use nori fumi furikake, which was at my local Safeway. (And so was the rice, actually.) She put a little seaweed in the middle of hers, but I was lazy and just use plain old rice, seasoned, and then I molded it in a greased measuring cup and banged it hard to get it out. They are sooooooo good.
And these are my recent lunches. On a random Sunday morning, I made 2 cups of brown rice and added baked tofu cut into chunks, frozen veggies, and then bottled curry sauce (or whatever I had on hand) and froze it all. I pop them in the toaster oven (they take forever to cook) but I can eat them one handed in a bowl and don't have to actually make lunch for myself. They are like the Trader Joe's rice bowls only way cheaper and with tofu. I'm still fine-tuning this, but I am quite happy for the most part.
I have been a fruit addict lately (Trying to lay off the refined sugar, you know, to help get rid of that baby weight. Let's ignore my rice ball consumption for the moment.) My Mother-in-Law made me the best summer salad ever.
-chopped up seedless watermelon (1/2 of the melon)
-the juice of 1 lime
-chopped basil (small handful)
-and a it of feta (small handful)
OMG. Simply wonderful. I know there are a few recipes out there for this, but you don't even need one. Just make sure to eat it right away (it won't keep) and use a salty feta that's not too goat-y.
