This is breakfast —but it could have been dinner. Eggs & rice with matcha salt on top. Eggs are my comfort food. And so is oatmeal. (Not together. That would be weird.) I ate a lot of oatmeal in college for dinner. I still do when I am feeling sad and it always cheers me up—although it sounds so pitiful, I realize.
The eggs here have matcha salt sprinkled on top, which I was introduced to by Mariko last year, or the year before, I can't remember. It's the best. I have been drinking more matcha tea lately and I swear it has kept the flu away. At least that's what I think. Drinking something that green has got to give you super powers.
I also need to mention that the perfect eggs (for me) are over soft and the foolproof way I make them is to crack 2 eggs in a small pan and then drizzle water around the eggs when the pan is hot and cover with a plate or lid. I keep checking them until they are set—about 2-3 minutes. It works like a charm every time. kind of poaching them with the water/steam, but even easier than poaching. I can't remember where I read this tip long ago. (Martha?)
