I finally got around to making these quinoa muffins that I remembered seeing in an old Everyday Food a bit ago. Here's the recipe. They were good! They were my type of good, mind you, not everyone in the house thought they were good. I made a few changes, used butter, not oil, and whole wheat flour, not white and didn't add the raisins, but I did add 1 teaspoon of spice mix, which I definitely recommend. Or at least some cinnamon. I eat them for breakfast with a lot of jam. They freeze quite well and 2 out of 3 of my kids will eat them, also with a lot of jam.
