In the hopes that eating this will bring warmer weather, we made the Strawberry Lemonade Icebox Pie this week. It was so good. It's even better for breakfast. The recipe is from the newest Martha, June 2011, and it doesn't appear to be online yet—but it's really just a lemon bar filling baked in a graham cracker crust with mashed strawberries and meringue on top of that. We used whipped cream on the side instead. It's so easy. The filling is just a lot of lemon juice, sweetened condensed milk, and egg yolks. When the recipe is available I will link it, otherwise you can see it in the newest issue at the store. The photos from the magazine and all the pie recipes in this issue look delicious.

I was thrilled to read this morning that one of my favorite baking authors has a new book coming out (boo— not until summer 2012) all about vintage cakes! It's Julie Richardson, of Rustic Fruit Dessert fame. She owns one of my favorite bakeries here in Portland, Baker & Spice which has amazing goodies, including cakes, and our local paper has a nice piece about the research behind Julie's newest book plus some recipes—one from the forthcoming book and two others that are vintage cake related. They are linked in the article.
