I made these delicious pumpkin pancakes last week and got a little weird about them.In a good way. The girls thought they were pretty good. Pete loved them. We had extra left over, so I ate them two mornings in a row and they were even better the next day. I used this recipe and didn't change a thing. I did make a 1/2 batch. My middle child is a food shredder and also is easily grossed out. So, eating with her can be a challenge because she will shred her food while eating it, picking it apart in an animalistic way, and then say it's kind of gross. Well, yes, I say, you have made it quite gross. It's funny, but at times, not funny and just plain gross. She, after digging at them, found these pancakes a bit gross, but I assure you, if you don't tear out their innards and eat them like a human, they are very good.
I sure hope everyone has a good Thanksgiving. We are headed to Grammie's and we are taking stuffing (this is all Pete) and I am making this shredded brussel sprout salad (so easy and simple) and this cake for one of the many desserts that will be there.
The weekend after Thanksgiving, I plan to make an advent calendar, which I have never done and always wanted to do. I have it all planned out. It's super easy and I am using simple items I already have. Nothing lowers my stress like gluing stuff to other stuff—so that's what I am gonna do.
